Ingredients
  

Main ingredients
  • 1 head head of cauliflower Steamed and chopped
  • 4 oz cream cheese Softened
  • 1/2 cup sour cream Can substitute with Greek yogurt
  • 1 cup sharp cheddar cheese, shredded Extra for topping if desired
  • 1 cup Monterey Jack cheese, shredded
  • 6 strips bacon, cooked and crumbled Divided into two halves
  • 1/4 cup chives, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower until it's tender, then chop it into small, bite-sized pieces.
  3. In a large mixing bowl, combine the cream cheese, sour cream, sharp cheddar, Monterey Jack cheese, half of the crumbled bacon, and chives.
  4. Gently fold in the chopped cauliflower. Season everything with salt and pepper to taste.
Baking
  1. Transfer your cheesy mixture to a greased baking dish. Top with the remaining bacon and sprinkle extra cheese if desired.
  2. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  3. Serve hot and enjoy the delightful flavors!
