Loaded Cauliflower Casserole is a tasty and creamy side dish that takes plain cauliflower to the next level. It's packed with cheese, bacon, and flavor, making it a delicious addition to any meal.

  • 1 head cauliflower, cut into florets
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 6 strips bacon, cooked and crumbled
  • 1/4 cup chives, chopped
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Steam the cauliflower florets in a large pot until tender, about 8-10 minutes.
  3. In a large bowl, combine the steamed cauliflower, cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, crumbled bacon, and chives. Mix well.
  4. Season the mixture with salt and pepper to taste.
  5. Pour the cauliflower mixture into a greased baking dish and smooth the top.
  6. Bake for 25-30 minutes, or until the casserole is hot and bubbly.
  7. Remove from the oven and let cool slightly before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm it in the oven or microwave until heated through. Make sure to steam the cauliflower until it is very tender for the best texture. Don't skip the bacon; it adds a wonderful flavor! Feel free to add extra cheese on top for a cheesier casserole.
