- Preheat the oven to 350°F (175°C).
- Steam the cauliflower florets in a large pot until tender, about 8-10 minutes.
- In a large bowl, combine the steamed cauliflower, cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, crumbled bacon, and chives. Mix well.
- Season the mixture with salt and pepper to taste.
- Pour the cauliflower mixture into a greased baking dish and smooth the top.
- Bake for 25-30 minutes, or until the casserole is hot and bubbly.
- Remove from the oven and let cool slightly before serving.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm it in the oven or microwave until heated through. Make sure to steam the cauliflower until it is very tender for the best texture. Don't skip the bacon; it adds a wonderful flavor! Feel free to add extra cheese on top for a cheesier casserole.
