  • 1 head cauliflower, cut into florets
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 6 strips bacon, cooked and crumbled
  • 1/4 cup chives, chopped
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • Steam the cauliflower florets in a large pot until tender, about 8-10 minutes.
  • In a large bowl, combine the steamed cauliflower, cream cheese, sour cream, sharp cheddar cheese, Monterey Jack cheese, crumbled bacon, and chives. Mix well.
  • Season the mixture with salt and pepper to taste.
  • Pour the cauliflower mixture into a greased baking dish and smooth the top.
  • Bake for 25-30 minutes, or until the casserole is hot and bubbly.
  • Remove from the oven and let cool slightly before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm it in the oven or microwave until heated through. Make sure to steam the cauliflower until it is very tender for the best texture. Don't skip the bacon; it adds a wonderful flavor! Feel free to add extra cheese on top for a cheesier casserole.
