  • 3/4 cup plain Greek yogurt Can substitute with sour cream.
  • 1/2 cup mayonnaise Can use a light mayo for fewer calories.
  • 1/4 cup clover honey Reduce amount for a less sweet dressing.
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
Salad Ingredients
  • 4 cups small broccoli florets (diced)
  • 4 cups small cauliflower florets (diced)
  • 12 slices thick cut bacon (cooked and diced) Use pre-cooked bacon for convenience.
  • 8 ounces Colby Jack cheese (small cubed) Can swap for sharp cheddar or Monterey Jack.
  • 1/2 medium red onion (chopped and rinsed)

Method
 

Preparation
  1. In a medium-sized mixing bowl, whisk together the Greek yogurt, mayonnaise, honey, red wine vinegar, granulated sugar, salt, and black pepper until smooth.
  2. Cover the bowl and chill the dressing for about 30 minutes to enhance the flavors.
  3. While the dressing chills, take a large salad bowl and combine the broccoli, cauliflower, bacon, cheese, and red onion.
  4. Pour the chilled dressing over the salad mixture and gently toss everything together until well coated.
  5. For a final touch, sprinkle additional bacon on top and serve immediately.
