Ingredients
  

For the dressing
  • 3/4 cup plain Greek yogurt
  • 1/2 cup mayonnaise Can use light version or avocado as a substitute.
  • 1/4 cup clover honey
  • 2 tablespoons red wine vinegar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
For the salad
  • 4 cups small broccoli florets (diced)
  • 4 cups small cauliflower florets (diced)
  • 12 slices thick cut bacon (cooked and diced) Can substitute with turkey bacon or omit for vegetarian.
  • 8 ounces Colby Jack cheese (small cubed) Can substitute with cheddar or pepper jack.
  • 1/2 medium red onion (chopped and rinsed)

Preparation
  1. In a medium-sized mixing bowl, whisk together the Greek yogurt, mayonnaise, honey, red wine vinegar, granulated sugar, salt, and black pepper.
  2. Cover the dressing mixture and refrigerate it for at least 30 minutes to let those flavors meld together.
  3. Grab a large salad bowl and add the diced broccoli, cauliflower, cooked bacon, cubed cheese, and chopped red onion.
  4. Once the dressing is chilled, pour it over the salad mixture and give everything a good toss to ensure even coating.
  5. Serve immediately with a sprinkle of extra bacon on top for that finishing touch. Enjoy!
