Ingredients
  

Wet Ingredients
  • 1/2 cup warm water Should be between 100°F and 110°F
  • 2 cups warm milk Should be warm but not boiling
  • 2 Tbsp melted unsalted butter Melted and warm
  • 1-3 Tbsp sugar Adjust to taste
Dry Ingredients
  • 3 Tbsp active dry yeast Can substitute with instant yeast
  • 6 cups whole wheat flour Or a mix of whole wheat and all-purpose flour
  • 2 tsp salt
  • 1 tsp baking powder

Method
 

Preparation
  1. Activate the yeast: In a large bowl, stir together warm water, 1 tablespoon of sugar, and yeast. Wait for about 5 minutes until frothy.
  2. Warm the wet ingredients: Microwave the milk and melted butter until warm (but not boiling).
  3. Combine: Add the warm milk and butter mixture to the yeast mixture.
  4. Incorporate the dry ingredients: Gradually add flour, salt, and baking powder, mixing with a standing mixer until combined.
  5. Knead the dough: Use the dough hook for about 5 minutes, then finish kneading by hand for an additional 5-7 minutes until smooth and elastic.
  6. Cook in the slow cooker: Line slow cooker with baking paper, place dough inside, and cook on high for 2 to 2.5 hours. Check every 7-10 minutes until top is spongey and springs back.
  7. Optional crusty top: For a crustier finish, pop the loaf under the broiler for less than 5 minutes.
