  • 32 ounce low-sodium chicken broth Can substitute with vegetable broth.
  • 2 cups water
  • 2 carrots chopped
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • 1 cup dried lentils Soaking is optional.
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1.5 cups cubed fully cooked ham Can substitute with turkey or plant-based protein.
  • 1 teaspoon dry mustard
  • 1 teaspoon salt Adjust to taste.
  • 0.5 teaspoon ground black pepper

Method
 

Preparation
  1. Gather all the ingredients from the list above.
  2. In a large stockpot, stir together the chicken broth, water, carrots, celery, onion, lentils, minced garlic, and red wine vinegar.
  3. Bring the pot to a boil over medium-high heat. Once boiling, lower the heat and allow it to simmer until the carrots are tender, about 10 minutes.
  4. Add in the cubed ham, dry mustard, salt, and black pepper. Continue to simmer for an additional 20 to 30 minutes, or until the lentils are tender.

Notes
