Preparation
- Preheat your oven to 400° and line a baking sheet with parchment paper; set it aside.
- In a small bowl, whisk the egg and water together until combined and set aside.
- Roll out the puff pastry on a lightly floured surface to ensure it’s even and easy to handle.
- For the cream cheese filling, combine the cream cheese, sugar, lemon juice, and vanilla in a mixing bowl until smooth.
Assembly and Baking
- Place a spoonful of lemon pie filling and a dollop of cream cheese mixture onto the pastry sheets.
- Using the egg wash, brush the edges of the pastry to help seal them as you fold them over.
- Bake in the preheated oven for about 15-20 minutes or until golden brown on top and puffed.
