Pastry Ingredients
  • 2 sheets Puff pastry sheets Thawed if frozen
  • 1/3 can 22-ounce can lemon pie filling Only uses about ⅓ of a can
Filling Ingredients
  • 4 ounces cream cheese At room temperature
  • 1/4 cup sugar
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon vanilla
  • 1 large egg
  • 1 1/2 teaspoons water
  • 1/2 cup powdered sugar
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400° and line a baking sheet with parchment paper; set it aside.
  2. In a small bowl, whisk the egg and water together until combined and set aside.
  3. Roll out the puff pastry on a lightly floured surface to ensure it’s even and easy to handle.
  4. For the cream cheese filling, combine the cream cheese, sugar, lemon juice, and vanilla in a mixing bowl until smooth.
Assembly and Baking
  1. Place a spoonful of lemon pie filling and a dollop of cream cheese mixture onto the pastry sheets.
  2. Using the egg wash, brush the edges of the pastry to help seal them as you fold them over.
  3. Bake in the preheated oven for about 15-20 minutes or until golden brown on top and puffed.
