Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs Use room temperature for best results.
  • 1/2 cup milk Dairy-free alternative can be used.
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
Blueberries
  • 1 cup fresh or frozen blueberries Frozen blueberries can be used directly; no need to thaw.
Glaze
  • 1 cup powdered sugar For glaze
  • 2 tablespoons lemon juice For glaze

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, salt, and baking powder until well combined.
  3. In a separate bowl, mix melted butter, eggs, milk, vanilla extract, lemon zest, and lemon juice.
  4. Gradually pour the wet mixture into the dry ingredients and stir gently until just combined. Take care not to overmix!
  5. Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the greased loaf pan and bake for 50-60 minutes. The bread is done when a toothpick inserted into the center comes out clean.
Glazing
  1. For the glaze, whisk together the powdered sugar and lemon juice until you achieve a smooth consistency.
  2. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack. Drizzle the glaze generously over the top before slicing.

Notes
