Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic
  • ½ medium lemon, juiced

Instructions
 

  • In a small bowl, mix together the dried oregano, dried basil, chopped parsley, salt, and black pepper. Sprinkle this seasoning mixture evenly over all sides of the chicken pieces, ensuring they are thoroughly coated. Toss the chicken to evenly distribute the seasoning.
  • In a 12-inch skillet over medium heat, melt 2 tablespoons of the butter. Once melted, add the seasoned chicken to the skillet in an even layer. Cook the chicken for 8-10 minutes, flipping halfway through, until all sides are golden brown and the chicken is mostly cooked through.
  • Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about a minute, or until the garlic becomes fragrant and the chicken is cooked through to an internal temperature of 165°F.
  • Drizzle the freshly squeezed lemon juice over the chicken and stir to combine, ensuring all pieces are coated evenly.
  • Serve the lemon garlic chicken bites immediately while hot. Enjoy!
