Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press this mixture firmly into the bottom of a greased baking dish.
Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add in the 1 cup of sugar, and continue mixing until well combined.
- Add the sour cream, vanilla extract, lemon extract, and eggs, mixing until just combined.
Assembly and Baking
- Pour the cheesecake mixture over the prepared crust and smooth it out evenly.
- Dollop the lemon pie filling on top and swirl it gently with a knife for a marbled effect.
- Bake in the preheated oven for 30-35 minutes, or until the center is set and the edges are lightly browned.
- Remove from oven and allow to cool at room temperature, then refrigerate for at least 4 hours before slicing.
