Ingredients
  

For the crust
  • 1 ¾ cups graham cracker crumbs
  • ½ cup butter (melted)
  • ¼ cup sugar
For the cheesecake filling
  • 24 ounces cream cheese (softened) Ensure it's softened to room temperature.
  • 1 cup sugar
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 3 large eggs Best if at room temperature.
  • 21 ounces can lemon pie filling Using high-quality filling enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press this mixture firmly into the bottom of a greased baking dish.
Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add in the 1 cup of sugar, and continue mixing until well combined.
  3. Add the sour cream, vanilla extract, lemon extract, and eggs, mixing until just combined.
Assembly and Baking
  1. Pour the cheesecake mixture over the prepared crust and smooth it out evenly.
  2. Dollop the lemon pie filling on top and swirl it gently with a knife for a marbled effect.
  3. Bake in the preheated oven for 30-35 minutes, or until the center is set and the edges are lightly browned.
  4. Remove from oven and allow to cool at room temperature, then refrigerate for at least 4 hours before slicing.
