Ingredients
  

For the Brownies
  • 1 box 15.25 oz yellow cake mix I used Betty Crocker
  • 1 box lemon instant pudding
  • 1/3 cup lemon juice
  • 2 large eggs Room temperature
  • 1 teaspoon lemon zest
For the Glaze
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice Add more for desired consistency
  • Lemon zest for garnishing Optional

Method
 

Preparation
  1. Line an 8-inch square baking dish with parchment paper and spray with cooking spray.
  2. Preheat the oven to 350 degrees F.
  3. In a medium mixing bowl, mix the cake mix, lemon pudding, lemon juice, eggs, and lemon zest until fully blended.
  4. Pour the batter into the prepared pan, spreading it evenly.
Baking
  1. Bake for 22-24 minutes or until a toothpick inserted in the center comes out clean or with a few crumbs.
  2. Let the brownies cool in the pan for 10 minutes, then carefully lift them out using the parchment paper and allow to cool completely on a wire rack.
Making the Glaze
  1. Mix the powdered sugar with 1 tablespoon of lemon juice in a small bowl, adjusting the consistency with more lemon juice as necessary.
  2. Once cooled, cut the brownies into squares and drizzle with the glaze.
