Method
- Line an 8” square baking dish with parchment paper and spray it with cooking spray to ensure the brownies lift out easily.
- Preheat the oven to 350 degrees Fahrenheit.
- Using a hand mixer, combine the cake mix, lemon pudding, lemon juice, eggs, and lemon zest in a medium-sized mixing bowl.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 22-24 minutes or until a toothpick inserted in the center comes out clean or with only crumbs (no wet batter).
- Remove from the oven and let it cool in the pan for 10 minutes.
- Lift the parchment paper out of the pan and allow the brownies to cool completely.
- Cut the cooled brownies into squares and prepare the glaze.
- For the glaze, combine the powdered sugar and lemon juice together in a bowl until smooth.
- Drizzle the glaze over the brownies and sprinkle with lemon zest for garnish.
