  • 1/2 teaspoon baking powder Ensure it's fresh for best rise.
  • 1/4 teaspoon salt Balances sweetness.
  • 1/2 teaspoon vanilla extract Enhances flavor.
For the glaze
  • 1/2 cup powdered sugar Sifted for a smooth glaze.
  • 2 tablespoons fresh lemon juice Adjust for desired sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and creamy.
  3. Add in the eggs, lemon zest, and lemon juice, whisking until fully combined.
  4. In another bowl, whisk together the flour, baking powder, salt, and vanilla extract.
  5. Gradually fold the dry mixture into the wet mixture, mixing until just combined. Avoid overmixing.
  6. Pour the batter into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes. Check for doneness using a toothpick; it should come out clean.
  2. While baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
  3. Once the brownies are done, let them cool completely in the baking dish.
  4. Drizzle the lemon glaze over the cooled brownies and allow it to set before cutting into squares.
