Preparation
- Preheat the oven to 350°F (175°C). Line an 8” square baking dish with parchment paper and lightly coat with cooking spray.
- In a medium mixing bowl, use a hand mixer to blend together the cake mix, lemon pudding, lemon juice, eggs, and lemon zest until well combined.
- Pour the batter into the prepared baking dish, spreading it evenly.
Baking
- Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean or with only a few crumbs.
- Allow the brownies to cool in the pan for 10 minutes, then use the parchment paper to lift them out. Let them cool completely.
- Cut the cooled brownies into squares.
Glazing
- For the glaze, whisk together the powdered sugar and lemon juice until smooth.
- Drizzle the glaze over the brownies and sprinkle with lemon zest for an optional garnish.
