Ingredients
  

Brownie Batter
  • 1 box yellow cake mix (15.25 oz)
  • 1 box lemon instant pudding
  • 1/3 cup lemon juice
  • 2 large eggs
  • 1 teaspoon lemon zest
Glaze
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice for glaze
  • lemon zest for optional garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line an 8” square baking dish with parchment paper and lightly coat with cooking spray.
  2. In a medium mixing bowl, use a hand mixer to blend together the cake mix, lemon pudding, lemon juice, eggs, and lemon zest until well combined.
  3. Pour the batter into the prepared baking dish, spreading it evenly.
Baking
  1. Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean or with only a few crumbs.
  2. Allow the brownies to cool in the pan for 10 minutes, then use the parchment paper to lift them out. Let them cool completely.
  3. Cut the cooled brownies into squares.
Glazing
  1. For the glaze, whisk together the powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the brownies and sprinkle with lemon zest for an optional garnish.
