  • 1/2 cup peanut butter Any nut butter can be used as a substitute.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1 cup rolled oats Quick oats can be used for a chewier texture.
  • 1/2 cup crushed graham crackers Can substitute with crushed cookies of your choice.
  • 1/4 cup mini marshmallows Optional, can be swapped with dried fruits for a different flavor.

Preparation
  1. In a microwave-safe mixing bowl, combine peanut butter and honey or maple syrup. Microwave for 30 seconds and stir until smooth.
  2. Add chocolate chips and microwave for an additional 30 seconds, then stir until melted and well combined.
  3. Stir in rolled oats, crushed graham crackers, and mini marshmallows until evenly mixed.
  4. Line a baking tray or plate with parchment paper.
  5. Scoop the mixture onto the prepared tray, shaping into cookies.
  6. Refrigerate for at least 1 hour to set.
  7. Optional: Drizzle with melted white chocolate before serving.

Notes
