  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats Quick oats can be used for a chewier texture
  • 1/2 cup crushed graham crackers
  • 1/4 cup mini marshmallows

Preparation

  • In a microwave-safe mixing bowl, combine peanut butter and honey or maple syrup. Microwave for 30 seconds and stir until smooth.
  • Add chocolate chips and microwave for an additional 30 seconds, then stir until melted and well combined.
  • Stir in rolled oats, crushed graham crackers, and mini marshmallows until evenly mixed.
  • Line a baking tray or plate with parchment paper.
  • Scoop the mixture onto the prepared tray, shaping into cookies.
  • Refrigerate for at least 1 hour to set.
  • Optional: Drizzle with melted white chocolate before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for longer storage, separating cookies with parchment paper if stacking.
