  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats Quick oats can be used for a chewier texture
  • 1/2 cup crushed graham crackers
  • 1/4 cup mini marshmallows

Preparation
  1. In a microwave-safe mixing bowl, combine peanut butter and honey or maple syrup. Microwave for 30 seconds and stir until smooth.
  2. Add chocolate chips and microwave for an additional 30 seconds, then stir until melted and well combined.
  3. Stir in rolled oats, crushed graham crackers, and mini marshmallows until evenly mixed.
  4. Line a baking tray or plate with parchment paper.
  5. Scoop the mixture onto the prepared tray, shaping into cookies.
  6. Refrigerate for at least 1 hour to set.
  7. Optional: Drizzle with melted white chocolate before serving.
