Ingredients
  

Chicken and Coating
  • 2 pounds chicken breasts, boneless and skinless, cut into 1 inch pieces
  • 1 large egg, beaten
  • 1/2 cup cornstarch
  • Vegetable oil, for frying About 3 inches for frying
Sauce
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons gochujang Korean chili paste
Garnishes
  • Green onions (for garnish)
  • Toasted sesame seeds (for garnish)
  • Sliced red chilis (for garnish)

Method
 

Preparation
  1. Toss the chicken pieces through the egg first, then dredge thoroughly through the cornstarch.
  2. Add about 3 inches of oil to a heavy-bottomed pan and heat to 375 degrees Fahrenheit.
Frying
  1. Add chicken to the pan and fry in batches for about 3 to 4 minutes per batch.
  2. Transfer the chicken to a paper towel-lined plate and repeat with the remaining chicken.
Sauce Preparation
  1. In a skillet over medium heat, melt the butter.
  2. Add the garlic and ginger, cooking for about 30 seconds until aromatic.
  3. Stir in the brown sugar and honey, cooking for about 1 minute until the brown sugar dissolves.
  4. Add the soy sauce, rice vinegar, sesame oil, and gochujang to the skillet, stirring well and cooking for another 30 seconds.
Serving
  1. Toss the fried chicken in the skillet with the sauce until evenly coated.
  2. Serve garnished with green onions, toasted sesame seeds, and sliced red chilis.
