Ingredients
  

Cookie Mixture
  • 1 cup unsalted butter, softened Use room temperature butter for the best texture.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon lime zest Preferably from fresh limes.
  • 1/4 cup fresh lime juice Fresh juice is recommended.
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips (optional) Alternative: use nuts or different types of chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. After that, stir in the vanilla, lime zest, and lime juice.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. If desired, fold in the white chocolate chips for an additional burst of flavor.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, ensuring to leave enough space between each cookie to allow for spreading.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
