- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

- Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. After that, stir in the vanilla, lime zest, and lime juice.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- If desired, fold in the white chocolate chips for an additional burst of flavor.
- Drop rounded tablespoons of dough onto the prepared baking sheets, ensuring to leave enough space between each cookie to allow for spreading.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
