Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
- In a bowl, combine the graham cracker crumbs, ½ cup of sugar, and melted butter until mixed. Press this mixture into the bottom of the prepared baking pan.
Filling
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and beat until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the key lime juice and lime zest until evenly blended.
- Pour the cream cheese mixture over the prepared crust in the baking pan.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the center is set.
- Let cool, then refrigerate for at least 2 hours before cutting into bars.
