Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups sugar
  • 0.5 cups unsalted butter, melted
For the Filling
  • 16 oz cream cheese, softened Make sure it’s at room temperature.
  • 1 cups sugar
  • 3 large eggs Add one at a time.
  • 0.75 cups key lime juice Taste before using to check acidity.
  • 1 tablespoon lime zest

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a bowl, combine the graham cracker crumbs, ½ cup of sugar, and melted butter until mixed. Press this mixture into the bottom of the prepared baking pan.
Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and beat until well combined.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the key lime juice and lime zest until evenly blended.
  4. Pour the cream cheese mixture over the prepared crust in the baking pan.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the center is set.
  2. Let cool, then refrigerate for at least 2 hours before cutting into bars.
