  • 2 Tablespoons granulated sugar
  • 1/2 cup unsalted butter (1 stick), melted
Filling Ingredients
  • 6 oz cream cheese, softened Should be at room temperature for easier mixing.
  • 1 can sweetened condensed milk (14-ounce)
  • 4 egg yolks
  • 1 Tablespoon lime zest
  • 1/2 cup key lime juice Fresh juice is recommended for best flavor.
  • 1/4 cup whipping cream For topping.
  • 1 teaspoon confectioners sugar For sweetening the whipped cream.
  • 2 teaspoons lime zest For garnish.

Preparation
  1. Preheat the oven to 325°F. Line an 8×8-inch pan with foil and lightly grease it for easy removal.
  2. Prepare the crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan. Bake for about 10 minutes until set.
  3. Make the filling: In a medium bowl, beat the softened cream cheese until it’s smooth. Gradually add in the condensed milk and beat until well combined.
  4. Incorporate the eggs: Mix in the egg yolks one at a time, ensuring each is well blended before adding the next.
  5. Add the zesty flavor: Stir in the lime zest and key lime juice until smooth.
  6. Combine and bake: Pour the filling onto the baked crust and bake for about 30 minutes, or until set.
  7. Cool down: Allow the bars to cool to room temperature before chilling them in the fridge for at least 2 hours.
  8. Final touch: Whip the cream with confectioners sugar until stiff peaks form. Top each bar with whipped cream and a sprinkle of lime zest.
