Preparation
- Preheat the oven to 475°F. Place the top oven rack about 6 inches from the heating element.
- Soak wooden skewers in water and set aside.
- In a large mixing bowl, combine the ground beef, onion, tomato, 2 tablespoons of parsley, garlic, oregano, thyme, rosemary, dill, salt, and pepper.
- Evenly divide the beef mixture onto each tortilla, spreading it in a thin layer right to the edges.
- Lay a piece of parchment paper over the beef, and roll each tortilla into a tight log using a rolling pin.
- Carefully peel away the parchment paper and wrap each log tightly in plastic wrap; chill for at least 20 minutes.
- Once chilled, slice each log into 1-inch thick pinwheels.
- Thread the pinwheels onto the soaked skewers, ensuring the cut sides are facing out.
Cooking
- Spray a baking sheet with cooking spray and place the skewers cut side down on the sheet.
- Bake for 5 minutes per side, then switch the oven to broil for 1 to 2 minutes per side or until the tortillas are crispy and browned.
- Garnish with the remaining 2 tablespoons of parsley and serve hot with tzatziki sauce if desired.
