  • 1.5 pounds ground beef (85/15) Can substitute with ground turkey or a veggie alternative.
  • 0.5 cup chopped onion
  • 0.33 cup finely chopped tomatoes
  • 0.25 cup minced fresh parsley Divided; 2 tablespoons for the mix and 2 tablespoons for garnish.
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon dill weed
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 4 pieces flour tortillas (10 inches)
  • to taste refrigerated tzatziki sauce for dipping Optional

Method
 

Preparation
  1. Preheat the oven to 475°F. Place the top oven rack about 6 inches from the heating element.
  2. Soak wooden skewers in water and set aside.
  3. In a large mixing bowl, combine the ground beef, onion, tomato, 2 tablespoons of parsley, garlic, oregano, thyme, rosemary, dill, salt, and pepper.
  4. Evenly divide the beef mixture onto each tortilla, spreading it in a thin layer right to the edges.
  5. Lay a piece of parchment paper over the beef, and roll each tortilla into a tight log using a rolling pin.
  6. Carefully peel away the parchment paper and wrap each log tightly in plastic wrap; chill for at least 20 minutes.
  7. Once chilled, slice each log into 1-inch thick pinwheels.
  8. Thread the pinwheels onto the soaked skewers, ensuring the cut sides are facing out.
Cooking
  1. Spray a baking sheet with cooking spray and place the skewers cut side down on the sheet.
  2. Bake for 5 minutes per side, then switch the oven to broil for 1 to 2 minutes per side or until the tortillas are crispy and browned.
  3. Garnish with the remaining 2 tablespoons of parsley and serve hot with tzatziki sauce if desired.
