Preparation
- Ensure chicken breasts are evenly thick for consistent cooking.
- In a large mixing bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and the juice of one lemon.
- Place chicken breasts in the marinade, cover with plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Grilling
- Preheat grill to medium-high heat.
- Remove marinated chicken from the fridge and let it come to room temperature for 20-30 minutes.
- Place marinated chicken breasts on the grill and cook for 5-7 minutes on one side without moving.
- Flip the chicken breasts and brush generously with BBQ sauce. Continue grilling for another 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from the grill, let rest for a few minutes, then garnish with freshly chopped parsley before serving.
