Ingredients
  

  • 1 package Jiffy cornbread mix
  • 30 ounces canned corn, drained
  • 15 ounces canned creamed corn
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup melted butter
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish with non-stick cooking spray.
  2. In a large mixing bowl, thoroughly combine the Jiffy cornbread mix, canned corn, creamed corn, eggs, sour cream, melted butter, cayenne pepper, salt, and pepper.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for 45-50 minutes, or until the center is set and a tester comes out mostly clean.
