Jalapeno Popper Sandwich

A spicy and creamy sandwich combining jalapenos, cheese, and bacon for a delightful treat perfect for lunch or dinner.

Ingredients
  

For the sandwich
  • 2 pieces jalapenos, sliced lengthwise, seeds and membranes removed Leave some seeds for extra heat if desired.
  • 4 ounces cream cheese
  • 4 slices bacon, crispy cooked
  • 2 slices Monterey Jack cheese
  • 2 slices sharp cheddar cheese
  • 4 slices Italian bread Any type of bread can be used.
  • to taste chopped cilantro (optional)
  • to taste pats of butter For grilling the sandwich.

Method
 

Preparation
  1. Preheat your oven to 375 degrees.
  2. Stuff each jalapeno half with approximately 1 ounce of cream cheese. Place the stuffed jalapenos on a baking sheet and bake them for 25-30 minutes. After baking, remove from the oven.
  3. Slice the cooked stuffed jalapenos into bite-size pieces.
Assembly
  1. For each sandwich, place 1 slice of cheddar cheese on 2 slices of bread and 1 slice of Monterey Jack cheese on the other 2 slices.
  2. Divide the jalapeno slices between the 2 slices of bread with cheddar.
  3. Add the 4 slices of bacon to the slices of bread with Monterey Jack. If you like, sprinkle some chopped cilantro on one side.
  4. Combine the slices of bread to form 2 sandwiches.
Grilling
  1. On top of each sandwich, add several pats of butter. Place the sandwiches in a skillet over medium-low heat, butter side down. Add more pats of butter on top.
  2. Grill each side until lightly browned. The cheese should be melted and gooey.

Notes

Serve warm, cut in half with a side of chips or a fresh salad. For a vegetarian version, leave out the bacon and add roasted vegetables instead.
