Ingredients
  

Cheese Base
  • 2 packages 8 oz. cream cheese, slightly softened Ensure it's at room temperature.
  • 2 tablespoons sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
Cheese and Toppings
  • 1 cup shredded sharp cheddar cheese Reserve 1/4 cup for topping.
  • 1 cup Pepper Jack cheese Reserve 1/4 cup for topping.
  • 12 slices thick-cut bacon, crispy, cooked, and chopped Reserve half for topping.
  • 2 jalapeños, minced Reserve half for topping.
  • 4 green onions or chives, chopped Reserve half for topping.

Method
 

Preparation
  1. In a mixing bowl, beat together the softened cream cheese, sour cream, garlic powder, onion powder, and black pepper using a handheld mixer on medium speed until smooth and creamy.
  2. Reduce the mixer speed to low and blend in 1 ½ cups of your pre-shredded cheeses, half of the cooked bacon, half of the minced jalapeño, and half of the chopped green onions until well combined.
  3. In a small Ziploc bag, combine your reserved ingredients and store them in the fridge until you're ready to serve.
  4. Spoon the cheese mixture onto a large sheet of plastic wrap laid flat on your surface. Bring up the sides of the plastic wrap to create a ball shape and use your hands to mold it into a perfect sphere.
  5. Refrigerate the cheese ball overnight to firm it up.
Serving
  1. About 20 minutes before serving, take it out of the fridge. Unwrap the cheese ball and place it on a large cutting board.
  2. Roll it in the reserved toppings until it's completely covered.

Notes
