  • 1 cup extra-virgin olive oil
  • 1 pound sweet Italian sausage
  • 2 pieces bell peppers, sliced Any color
  • 2 pieces yellow onions, sliced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon Italian seasoning
  • 1/4 cup chopped fresh basil leaves
  • 4 cloves garlic, chopped
  • 2 tablespoons tomato paste
  • 1 cup Marsala wine or chicken broth Use chicken broth for a non-alcoholic option
  • 1 can diced tomatoes (15-ounce)
  • 1/4 teaspoon red pepper flakes (optional) For added spice

Instructions
 

Cooking the Sausage

  • Heat the oil in a heavy large skillet over medium heat.
  • Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.

Preparing the Sauce

  • Keeping the pan over medium heat, add the Italian seasoning, basil, and garlic, and cook for 2 more minutes.
  • Add the Marsala wine, tomatoes, tomato paste, and stir. Add chili flakes if using.

Adding Vegetables

  • Add the peppers, onions, salt, and pepper, and bring to a simmer.
  • Return the sausage to the skillet with the vegetables. Reduce heat to low, and simmer for 15 minutes, or until the sauce has thickened.

Notes

For extra flavor, consider mixing in different types of sausage, like spicy sausage for a kick. You can also add more vegetables such as mushrooms or zucchini for a more colorful dish. Make sure to slice the vegetables evenly for even cooking. This dish can be paired with mashed potatoes, pasta, or served in hoagie rolls.
