Pasta and Sauce Ingredients
  • 10 ounces Rigatoni Pasta Whole wheat pasta is an excellent alternative if you prefer.
  • 1 pound Italian Sausage Choose mild or spicy based on your taste.
  • 1 medium Onion Chop it finely.
  • 3 cloves Garlic Minced to perfection.
  • 1 cup Sundried Tomatoes Chopped into little pieces.
  • 4 cups Fresh Spinach Kale can be a good substitute if you prefer.
  • 1 cup Cream Heavy cream will give the best results.
  • 1 cup Parmesan Cheese Freshly grated for the best flavor.
  • 2 tablespoons Olive Oil For sautéing the veggies and sausage.
  • Salt and Pepper To taste.

Method
 

Preparation
  1. In a pot of salted water, cook the rigatoni until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sausage, breaking it up as it cooks until browned.
  3. Toss in the chopped onion and minced garlic, stirring until fragrant and the onions are soft.
  4. Stir in the sundried tomatoes and fresh spinach, letting the greens wilt down.
  5. Pour in the cream, followed by the grated Parmesan cheese, combining everything to create a creamy sauce.
  6. Add the drained rigatoni to the skillet, mixing thoroughly to coat all the pasta in that rich, savory sauce.
  7. Adjust the seasoning with salt and pepper as needed before plating.
