  • 2 pounds potatoes, peeled and cubed Use starchy potatoes like Russets or Yukon Golds for creaminess.
  • 4 cups chopped kale or cabbage Feel free to use either for a slightly different flavor.
  • 1/2 cup milk Cream can be used for a richer texture.
  • 1/4 cup butter Can be substituted with plant-based alternatives for a vegan dish.
  • 1/2 cup green onions, chopped
  • to taste Salt and pepper

Method
 

Preparation
  1. Begin by boiling the potatoes in salted water until they’re tender, which usually takes about 15-20 minutes. Drain them and return them to the pot.
  2. Meanwhile, in a separate pan, sauté the chopped kale or cabbage in a bit of butter until it’s tender.
  3. Once the potatoes are drained, mash them up with the milk and butter until smooth and creamy.
  4. Fold in the sautéed greens and the chopped green onions. Don’t forget to season with salt and pepper to taste!
  5. Serve your Irish Colcannon hot, and enjoy every comforting bite.
