Preparation
- Begin by boiling the potatoes in salted water until they’re tender, which usually takes about 15-20 minutes. Drain them and return them to the pot.
- Meanwhile, in a separate pan, sauté the chopped kale or cabbage in a bit of butter until it’s tender.
- Once the potatoes are drained, mash them up with the milk and butter until smooth and creamy.
- Fold in the sautéed greens and the chopped green onions. Don’t forget to season with salt and pepper to taste!
- Serve your Irish Colcannon hot, and enjoy every comforting bite.
