  • 1/4 cup Irish whiskey can substitute with bourbon or brandy
  • 1 cup heavy cream can use low-fat cream for a lighter sauce
  • 2 tablespoons Dijon mustard can substitute with grainy mustard for a different flavor
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1/2 cup chicken broth adjust if sauce is too thick
  • 2 tablespoons butter for sautéing
Garnishes
  • 1 tablespoon fresh parsley, chopped for garnish
  • 1 tablespoon chives, chopped for garnish

  • to taste salt and black pepper for seasoning the chicken

Method
 

Preparation
  1. Season the chicken breasts generously with salt and black pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts, cooking for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
Sauce Preparation
  1. In the same skillet, add the butter. Once melted, toss in the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onions are translucent.
  2. Carefully pour the Irish whiskey into the skillet and allow it to reduce slightly. If feeling adventurous, flambé the whiskey to burn off the alcohol.
  3. Once reduced, stir in the heavy cream, Dijon mustard, Worcestershire sauce, and chicken broth. Bring to a gentle simmer while stirring until the sauce thickens.
Final Steps
  1. Return the cooked chicken to the skillet, spooning the sauce over it. Let it simmer for an additional 5 minutes to meld the flavors.
  2. Garnish with fresh parsley and chives before serving.
