Ingredients
  

For the Creamy Filling
  • 8 oz 8 oz cream cheese, softened Make sure it's well softened to prevent lumps.
  • 1 cup 1 cup powdered sugar
  • 1 cup 1 cup whipped topping
  • 1 can 1 can crushed pineapple, drained Can use fresh pineapple instead; ensure it's crushed and drained.
For the Layers
  • 1 cup 1 cup graham cracker crumbs
  • 1/2 cup 1/2 cup unsweetened coconut flakes Can swap for crushed graham crackers.
  • 2 tablespoons 2 tablespoons melted butter
  • 1/2 cup 1/2 cup chopped pecans (optional) Can be omitted for nut allergies.

Method
 

Preparation
  1. In a mixing bowl, beat the cream cheese until it’s smooth and creamy.
  2. Gradually add in the powdered sugar, mixing well until fully incorporated.
  3. Gently fold in the whipped topping and the drained crushed pineapple until the mixture is even.
  4. In another bowl, mix together the graham cracker crumbs, coconut flakes, and melted butter until well combined.
  5. In a serving dish, layer half of the graham cracker mixture at the bottom, followed by the pineapple mixture.
  6. Repeat the layers, finishing with the remaining graham cracker mixture on top.
  7. Refrigerate for at least 2 hours to allow the flavors to meld together and the dessert to set.
