Preparation
- Preheat the oven to 300°F (150°C).
- Pat the chicken thighs dry and place them in a baking dish in a single layer. Season generously with salt and pepper and sprinkle garlic powder if using.
- Scatter the sliced onion over and between the thighs.
- Whisk the barbecue sauce and cola in a bowl until smooth, then pour evenly over the chicken and onions.
- Cover the dish tightly with foil and bake on the middle rack for 2 to 3 hours.
- Remove the foil for the final 30 minutes to let the sauce reduce and caramelize.
- Serve the thighs hot, topping each portion with sauce and onions.
