  • 4 pieces chicken thighs (bone-in, skin-on recommended) Boneless works but will cook faster.
  • 1 cup barbecue sauce Choose your favorite; smoky or sweet.
  • 1 cup cola Regular cola adds sweetness and acidity.
  • 1 piece onion, sliced Yellow or sweet onion works best.
  • to taste salt and pepper
  • 1/2 to 1 teaspoon garlic powder Optional.

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Pat the chicken thighs dry and place them in a baking dish in a single layer. Season generously with salt and pepper and sprinkle garlic powder if using.
  3. Scatter the sliced onion over and between the thighs.
  4. Whisk the barbecue sauce and cola in a bowl until smooth, then pour evenly over the chicken and onions.
  5. Cover the dish tightly with foil and bake on the middle rack for 2 to 3 hours.
  6. Remove the foil for the final 30 minutes to let the sauce reduce and caramelize.
  7. Serve the thighs hot, topping each portion with sauce and onions.
