- In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, and minced garlic.
- Blend until smooth, adding water as needed to achieve desired consistency.
- Season with salt to taste and blend again.
- Transfer to a serving bowl and drizzle with olive oil. Sprinkle with paprika if desired.
- Serve with pita bread, vegetables, or as part of a mezze platter.
Notes
Chill the hummus for a bit before serving. It tastes even better when it's cold! Store any leftover hummus in an airtight container in the refrigerator for about 4 to 7 days.
