Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, egg, and oil until well mixed.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.
- Gently fold in the shredded coconut, diced pineapple, and chopped pecans.
- Pour the batter into the prepared loaf pan and smooth out the top.
Baking
- Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Frosting Preparation
- Prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and cinnamon until smooth.
- Once the bread is completely cooled, generously spread the frosting on top and enjoy.
