For the Hummingbird Bread
  • 3 ripe bananas, mashed Use overripe for maximum sweetness.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free blend.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sweetened shredded coconut Can be adjusted to taste.
  • 1/2 cup diced pineapple, patted dry Important to pat dry to avoid sogginess.
  • 1/2 cup chopped pecans Can be substituted with walnuts.
For the Cream Cheese Frosting
  • 1 package cream cheese Softened.
  • 1/4 cup butter Softened.
  • 1 cup powdered sugar
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, egg, and oil until well mixed.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.
  5. Gently fold in the shredded coconut, diced pineapple, and chopped pecans.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
Baking
  1. Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Frosting Preparation
  1. Prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and cinnamon until smooth.
  2. Once the bread is completely cooled, generously spread the frosting on top and enjoy.
