Ingredients
  

For the Chicken
  • 4 pieces Chicken breasts Skinless and boneless
  • 1/4 cup Lime juice Freshly squeezed
  • 2 tablespoons Honey For a sweet marinade
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Avocado Rice
  • 2 cups Cooked rice Can use white, brown, or any preferred type
  • 1 large Avocado Diced
  • 1 tablespoon Olive oil For flavor and moisture
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Pepper To taste
For Garnish
  • 1/4 cup Cilantro Optional, for garnish

Method
 

Marinating the Chicken
  1. In a bowl, whisk together lime juice, honey, salt, and pepper. Add the chicken, making sure it’s well-coated. Let it marinate for at least 30 minutes for maximum flavor.
Grilling the Chicken
  1. Preheat your grill to medium heat. Grill the chicken for about 6-7 minutes on each side until it’s fully cooked and has nice grill marks. Once done, let it rest for a few minutes before slicing.
Preparing the Avocado Rice
  1. In a separate bowl, mix the cooked rice with diced avocado. Drizzle with olive oil, then season with salt and pepper to taste.
Assembling the Stack
  1. On a serving plate, layer the sliced chicken over the avocado rice mixture, creating a stunning presentation.
Garnishing
  1. If desired, sprinkle fresh cilantro on top for an extra burst of flavor and color before serving.
