For the Chicken
  • 4 pieces chicken breasts Skinless is a good option too.
  • 2 tablespoons honey Can be substituted with maple syrup or agave nectar.
  • 1 piece lemon (juiced) Fresh lemon juice enhances flavor.
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • to taste Salt Use as desired.
For the Mashed Potatoes
  • 4 large potatoes (peeled and chopped) Can use sweet potatoes for a sweeter version.
  • 1/2 cup milk Add more for creamier potatoes.
  • 4 tablespoons butter
  • 4 cloves garlic (minced) More can be added for stronger flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix honey, lemon juice, black pepper, olive oil, and salt to create a marinade.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
Cooking Chicken
  1. Place the chicken on a baking sheet and bake for 25-30 minutes or until fully cooked.
Cooking Potatoes
  1. Meanwhile, boil the chopped potatoes in salted water until tender.
  2. Drain and mash the potatoes, adding butter and milk while mixing until smooth.
Serving
  1. Serve the baked honey lemon pepper chicken alongside the garlic mashed potatoes.
