  • 4 pieces chicken breasts
  • 2 tablespoons honey
  • 1 piece lemon (juiced)
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

For the Garlic Mashed Potatoes
  • 4 large potatoes (peeled and chopped)
  • 4 cloves garlic (minced)
  • 1/2 cup milk
  • 4 tablespoons butter

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix honey, lemon juice, black pepper, olive oil, and salt to create a marinade.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
Cooking
  1. Place the chicken on a baking sheet and bake for 25-30 minutes or until fully cooked.
  2. Meanwhile, boil the chopped potatoes in salted water until tender.
  3. Drain and mash the potatoes, adding butter and milk while mixing until smooth.
Serving
  1. Serve the baked honey lemon pepper chicken alongside the garlic mashed potatoes.
