For the chicken
  • 4 pieces chicken breasts Boneless, skinless for best results
  • 2 tablespoons honey
  • 1 piece lemon (juiced)
  • 1 teaspoon black pepper Freshly ground for best flavor
  • 4 cloves garlic (minced) Fresh for a stronger flavor
  • 1 tablespoon olive oil
  • to taste Salt
For the garlic mashed potatoes
  • 4 large potatoes (peeled and chopped)
  • 1/2 cup milk Adjust for desired creaminess
  • 4 tablespoons butter Add more if desired

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix honey, lemon juice, black pepper, minced garlic, olive oil, and salt.
  3. Place the chicken breasts in a baking dish and pour the honey lemon mixture over them, coating well.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through.
  2. Meanwhile, boil the chopped potatoes in salted water until tender.
  3. Drain the potatoes, then mash them with milk, butter, and additional salt to taste.
Serving
  1. Serve the chicken hot from the oven, alongside a generous scoop of garlic mashed potatoes.
  2. Garnish the chicken with a slice of lemon or a sprinkle of fresh herbs like parsley.
