  • 4 pieces boneless, skinless chicken thighs
  • 2 tbsp oil (olive or vegetable)
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free.
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water For cornstarch slurry.
  • to taste Salt & pepper
  • Fresh cilantro, chopped (for garnish)
  • Cooked white rice, for serving

Instructions
 

Preparation

  • Season the chicken with salt and pepper.
  • Heat oil in a skillet over medium-high heat and sear the chicken thighs for 4–5 minutes on each side until browned.

Cooking

  • In a bowl, whisk together the soy sauce, honey, garlic, and vinegar. Pour the mixture into the skillet with the chicken.
  • Reduce the heat to medium-low and cook the chicken in the sauce for 7–10 minutes, flipping occasionally.
  • Stir in the cornstarch slurry and simmer until the sauce thickens and becomes glossy.

Serving

  • Plate the chicken over rice, spoon extra sauce on top, and garnish with fresh cilantro.

Notes

For extra flavor, let the chicken marinate in the honey-soy mixture for 30 minutes before cooking. For a thicker sauce, double the cornstarch mixture. Pair with a squeeze of lime for a fresh twist. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
