Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or chicken thighs, cut into bite-size pieces
  • cup cornstarch
  • 2 eggs, lightly beaten
  • ½ cup flour
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cayenne pepper (optional)
  • Vegetable oil for frying
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ½ cup honey
  • 2 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar

Equipment

  • Heavy Skillet
  • Shallow Bowls

Method

  1. Prepare your breading stations. Place cornstarch in a shallow bowl, beat the eggs in another bowl, and mix flour, salt, freshly ground black pepper, and cayenne pepper (if using) in a third shallow bowl.
  2. Dredge the chicken pieces in cornstarch, then dip them in the beaten eggs, and finally coat them in the flour mixture. As you finish breading them, transfer them to a parchment paper-covered baking sheet, leaving some space between each piece.
  3. Heat about 1/4-inch of vegetable oil in a heavy skillet over medium-high heat. Fry the chicken pieces until golden brown on one side, then flip and cook until the other side is also golden brown. Remove the cooked chicken to a plate and continue frying in batches until all the chicken is browned and cooked through.
  4. Carefully wipe the skillet clean, as it will be hot. Reduce the heat to medium-low and add the butter. Once melted, add the minced garlic and cook for 1 minute, stirring constantly.
  5. Add the honey, water, soy sauce, and rice vinegar to the skillet. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to simmer for 10 minutes or until it thickens slightly.
  6. Return the cooked chicken to the skillet and top it with sliced green onions. Serve promptly.

Notes

This Honey Garlic Chicken is best served over steamed rice or with a side of stir-fried vegetables for a complete meal. Adjust the amount of cayenne pepper according to your spice preference.
