Method
- Prepare your breading stations. Place cornstarch in a shallow bowl, beat the eggs in another bowl, and mix flour, salt, freshly ground black pepper, and cayenne pepper (if using) in a third shallow bowl.
- Dredge the chicken pieces in cornstarch, then dip them in the beaten eggs, and finally coat them in the flour mixture. As you finish breading them, transfer them to a parchment paper-covered baking sheet, leaving some space between each piece.
- Heat about 1/4-inch of vegetable oil in a heavy skillet over medium-high heat. Fry the chicken pieces until golden brown on one side, then flip and cook until the other side is also golden brown. Remove the cooked chicken to a plate and continue frying in batches until all the chicken is browned and cooked through.
- Carefully wipe the skillet clean, as it will be hot. Reduce the heat to medium-low and add the butter. Once melted, add the minced garlic and cook for 1 minute, stirring constantly.
- Add the honey, water, soy sauce, and rice vinegar to the skillet. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to simmer for 10 minutes or until it thickens slightly.
- Return the cooked chicken to the skillet and top it with sliced green onions. Serve promptly.
Notes
This Honey Garlic Chicken is best served over steamed rice or with a side of stir-fried vegetables for a complete meal. Adjust the amount of cayenne pepper according to your spice preference.
