  • 12 oz soft caramels You can use store-bought or homemade.
  • 6 oz toasted pecan halves Always opt for toasted pecans for a richer flavor.
  • 8 oz semi-sweet chocolate chips or chopped chocolate Feel free to substitute dark chocolate for a richer flavor.

Preparation
  1. Line a cookie sheet with parchment paper or aluminum foil and mist it lightly with nonstick cooking spray.
  2. Create clusters with four pecan halves each, placing them so they point outward like the legs of a turtle.
  3. Unwrap your caramels and place them in a microwave-safe bowl. If they seem overly stiff, add a small spoonful of water. Microwave in 30-second intervals, stirring until you achieve a smooth texture.
  4. Allow the caramel to cool slightly, then drop a spoonful over each pecan cluster, covering them generously.
  5. In a microwave or using a double boiler, melt the chocolate until it's silky smooth.
  6. Using a spoon, drizzle the melted chocolate over each mound of caramel. Let it drip and spread naturally for a beautiful finish.
  7. Pop the tray into the fridge for at least 30 minutes. This will solidify the chocolate and caramel perfectly.
  8. Allow the turtles to reach room temperature before serving. If you have leftovers, store them in an airtight container in the fridge.

Notes
