  • 4 cups Potatoes, peeled and chopped Any variety works well, though Yukon golds are preferred for creaminess.
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
Liquids
  • 4 cups Chicken or vegetable broth Use low-sodium for a healthier option.
  • 1 cup Heavy cream For a richer soup, can be substituted with milk for lighter version.
Seasoning
  • 1 teaspoon Salt Adjust based on broth saltiness.
  • 1/2 teaspoon Black pepper Freshly ground is preferred.
  • 1 teaspoon Thyme, dried Can substitute with fresh thyme.

Method
 

Preparation
  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the peeled and chopped potatoes, broth, salt, and pepper; bring to a boil.
Cooking
  1. Reduce heat and let it simmer until potatoes are tender, about 20-25 minutes.
  2. Use a potato masher to mash some of the potatoes for a creamy texture.
  3. Stir in the heavy cream and thyme; cook for additional 5 minutes.
  4. Taste and adjust seasoning if necessary.
