Preparation
- In the bowl of a stand mixer fitted with a dough hook, mix together the flour, salt, and baking powder.
- With the mixer running, gradually add the oil and warm water. Mix until a smooth dough forms, which should take about 2-3 minutes.
- Turn the dough out onto a floured cutting board and divide it into 16 equal pieces.
- Roll each piece into a ball and flatten slightly.
- Let the dough rest for 15 minutes while you heat a large skillet over medium heat.
Cooking
- With a rolling pin, roll each ball of dough into a thin circle.
- Cook each tortilla in the heated skillet for about 1-2 minutes per side, flipping when you see bubbles forming on the surface. Cook for an additional 30 seconds on the second side.
- Transfer the cooked tortillas to a plate and repeat with the remaining dough.
