Main Ingredients
  • 2 cups dried navy beans Can be substituted with pinto or black beans.
  • 4 cups water For cooking the beans.
  • 1/2 cup onion, chopped
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons bacon, chopped (optional) Leave out for a vegetarian version.

Method
 

Preparation
  1. Soak the dried navy beans in plenty of water overnight.
  2. Drain and rinse the beans, then place them in a large pot with 4 cups of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer the beans until they are tender, about 1 to 1.5 hours.
Baking
  1. Preheat your oven to 325°F (163°C).
  2. In a large baking dish, mix the cooked beans with the chopped onion, brown sugar, ketchup, mustard, Worcestershire sauce, salt, and pepper.
  3. If using bacon, fold it into the mixture.
  4. Mix everything together, ensuring even distribution of the ingredients, then cover the dish with foil.
  5. Bake in the preheated oven for about 1 hour, stirring occasionally, until the beans are thick and bubbling.
  6. Allow the dish to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. They can also be frozen for up to 3 months. When reheating, add water to restore moisture if needed.
