  • 1 pound Ham steak, diced Can substitute with smoked turkey or omit for vegetarian option
  • 2 cans Canned white beans, rinsed and drained
  • 1 large Onion, chopped
  • 2 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Dried thyme Or 1 tablespoon fresh thyme
  • 1 Bay leaf
  • 4 cups Chicken broth Vegetable stock can be used for a lighter flavor

  1. In a large pot over medium heat, add a splash of olive oil. Once hot, toss in the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and diced ham. Cook for an additional minute, letting the garlic release its aroma.
  3. Pour in the rinsed beans, salt, pepper, thyme, bay leaf, and chicken broth. Stir well to combine all the ingredients.
  4. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 25-30 minutes, allowing the flavors to meld.
  5. Taste and adjust seasoning if needed. Remove the bay leaf before serving. Enjoy hot!
