Ingredients
  

For the meat
  • 1 pound lean ground beef or turkey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

For the base and toppings
  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce or spinach
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 medium red onion, thinly sliced
  • 1/4 cup pickles, diced
  • 2 tablespoons ketchup
  • 2 tablespoons mustard
  • 1 tablespoon relish (optional)
  • 1 medium avocado, diced (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the ground beef or turkey, breaking it apart with a spatula. Cook until browned and fully cooked, about 6-8 minutes.
  3. Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well and cook for another 2 minutes to meld the flavors.
  4. In serving bowls, add the cooked quinoa or brown rice as the base.
  5. Divide the seasoned meat evenly among the bowls, placing it atop the quinoa or rice.
  6. Add the halved cherry tomatoes, shredded lettuce, shredded cheese, sliced red onion, and diced pickles to each bowl.
  7. Drizzle ketchup, mustard, and relish (if using) over the top of each bowl.
  8. If desired, include the diced avocado for an extra creamy texture.
  9. Finish with a sprinkle of fresh parsley for a burst of color and flavor.
