For the Cake
  • 2 cups sugar
  • 1 ¾ cups flour
  • ¾ cup cocoa powder (sweetened)
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk or heavy cream
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Cream Cheese Filling
  • 1 cup cream cheese, softened
  • ¾ cup butter, softened
  • ½ tablespoon vanilla extract
  • 4 cups powdered sugar
For the Chocolate Cream Cheese Buttercream
  • ¾ cup butter, softened
  • ¾ cup cream cheese, softened
  • 1 ¾ cups cocoa powder
  • 5 cups powdered sugar
  • ½ cup + 3 tablespoons whole milk
  • 2 teaspoons vanilla extract

Method
 

Baking the Chocolate Cake
  1. Preheat your oven to 350°F (175°C) and grease your cake pans.
  2. In a large mixing bowl, combine sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla. Mix until smooth.
  4. Gradually stir in boiling water (the batter will be thin).
  5. Pour into prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans before transferring to wire racks.
Cream Cheese Filling Instructions
  1. Beat cream cheese and butter until creamy.
  2. Mix in vanilla and gradually add powdered sugar, beating until smooth and fluffy.
Chocolate Cream Cheese Buttercream Instructions
  1. Beat softened butter and cream cheese until smooth.
  2. Gradually add cocoa powder and powdered sugar, alternating with milk, until desired consistency is achieved.
  3. Mix in vanilla extract until fully incorporated.
Assembling Your Cake
  1. Level the cooled cake layers if needed.
  2. Place one layer on a serving plate and spread the cream cheese filling evenly on top.
  3. Top with the second layer and frost the entire cake with chocolate cream cheese buttercream.
