  • 1 cup Sugar For a deeper flavor, try brown sugar.

  • 2 teaspoons Yeast Use active dry or rapid rise yeast.
  • 1/2 cup Butter Margarine can be used for a dairy-free version.
  • 1 cup Milk Feel free to choose a non-dairy alternative.
  • 1 large Egg This can be omitted or swapped for a flax egg.
  • 1/2 cup Rum Substitute with another liquor, or use apple juice for non-alcoholic.
Fruits and Nuts
  • 2 cups Mixed Dried Fruit Raisins, currants, and cranberries add wonderful flavors.
  • 1 cup Candied Zest You can use store-bought or make your own.
  • 1/2 cup Sliced Almonds Omit if you are aiming for a nut-free option.
Topping
  • 1 cup Powdered Sugar Use stevia for a low-calorie substitute.

Method
 

Preparation
  1. In a small bowl, combine warm milk with yeast and a teaspoon of sugar. Allow it to sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the bread flour, sugar, salt, and the remaining dry ingredients.
  3. In another bowl, combine melted butter, the frothy yeast mixture, egg (if using), and rum. Mix well.
  4. Gradually pour the wet mixture into the dry ingredients. Stir until a soft dough forms.
  5. Turn the dough onto a floured surface and knead for about 10 minutes until it's smooth.
  6. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about an hour or until doubled in size.
  7. After the dough has risen, gently press it down and fold in the dried fruits, candied zest, and nuts.
  8. Shape the dough into a loaf and place it on a lined baking tray. Let it rise again for about 30 minutes.
  9. Preheat your oven to 350°F (175°C). Bake for 30-35 minutes or until golden brown and sounds hollow when tapped.
  10. Allow the Stollen to cool on a wire rack before drizzling with powdered sugar.
