Preparation
- In a small bowl, combine warm milk with yeast and a teaspoon of sugar. Allow it to sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the bread flour, sugar, salt, and the remaining dry ingredients.
- In another bowl, combine melted butter, the frothy yeast mixture, egg (if using), and rum. Mix well.
- Gradually pour the wet mixture into the dry ingredients. Stir until a soft dough forms.
- Turn the dough onto a floured surface and knead for about 10 minutes until it's smooth.
- Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about an hour or until doubled in size.
- After the dough has risen, gently press it down and fold in the dried fruits, candied zest, and nuts.
- Shape the dough into a loaf and place it on a lined baking tray. Let it rise again for about 30 minutes.
- Preheat your oven to 350°F (175°C). Bake for 30-35 minutes or until golden brown and sounds hollow when tapped.
- Allow the Stollen to cool on a wire rack before drizzling with powdered sugar.
