Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, grated carrots, almond flour, applesauce, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, baking powder, and salt. Mix until well combined.
- If desired, fold in walnuts or raisins for added texture and flavor.
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart for even baking.
- Flatten each cookie slightly with the back of a spoon to ensure they bake evenly.
Baking
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
