  • 1/4 cup honey or maple syrup Substitute with agave syrup for vegan option
  • 1 tsp vanilla extract
  • 1 tsp cinnamon Experiment with other spices like ginger or allspice
  • 1/2 tsp nutmeg
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • optional chopped walnuts or raisins For added texture and flavor

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the rolled oats, grated carrots, almond flour, applesauce, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, baking powder, and salt. Mix until well combined.
  • If desired, fold in walnuts or raisins for added texture and flavor.
  • Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart for even baking.
  • Flatten each cookie slightly with the back of a spoon to ensure they bake evenly.

Baking

  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze cookies layered between parchment paper in an airtight container for up to three months.
