Ingredients
  

Main Ingredients
  • 1 lb chicken breast, chopped into bite-sized pieces (about 2–3 medium breasts) Ensure chicken is cut into uniform pieces for even cooking.
  • 1 cup broccoli florets Can be substituted with other vegetables.
  • 1 medium zucchini, chopped Cut into bite-sized pieces.
  • 1 cup bell pepper (any color), chopped Use red, yellow, or green bell peppers.
  • 1/2 medium onion, chopped Any variety of onion can be used.
  • 2 cloves garlic, minced Fresh garlic will give the best flavor.
  • 2 tbsp olive oil
Seasonings
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Freshly ground is best.
  • 1 tbsp Italian seasoning (or your favorite spice blend) Feel free to customize.

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Chop the chicken and veggies into bite-sized pieces and place them in a large mixing bowl.
  3. Add the olive oil and seasonings to the bowl and toss everything until it’s evenly coated.
Cooking
  1. Put the mixture in the air fryer in a single layer. Air fry for about 10 minutes, shaking the basket halfway through.
  2. Ensure the chicken is golden and cooked through. The internal temperature should reach 165°F.
Serving
  1. Serve hot with your favorite dipping sauce, over cauliflower rice, or in a lettuce wrap.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat in the air fryer or microwave.
