Ingredients
  

For the Marinade

  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, finely chopped
  • 2 tablespoons packed brown sugar
  • 1/4 cup soy sauce
  • 1/2 cup pineapple juice
  • 1 cup teriyaki sauce

For the Chicken and Serving

  • 4 pieces boneless, skinless chicken thighs or breasts
  • 1 ripe pineapple, cut into circles
  • Chopped green onions for garnish
  • Toasted sesame seeds for garnish

Preparation and Marinating

  • In a bowl, mix together sesame oil, ginger, garlic, brown sugar, soy sauce, pineapple juice, and teriyaki sauce to create the marinade.
  • Place chicken in a resealable plastic bag or container and pour the marinade over it. Seal and marinate in the refrigerator for at least 2 hours, preferably overnight.

Grilling

  • Preheat your grill to medium-high heat.
  • Remove chicken from marinade and grill for about 7-10 minutes on each side, until cooked through.
  • During the last few minutes of grilling, add pineapple slices to the grill and cook until caramelized.

Serving

  • Serve the grilled chicken garnished with chopped green onions and toasted sesame seeds, alongside the grilled pineapple slices.

Notes

For the best flavor, marinate the chicken overnight. If you don’t have a grill, you can use a grill pan or bake the chicken in the oven at 400°F until cooked through. Feel free to add other veggies to the grill, like bell peppers or zucchini, for extra flavor and nutrition.
